Tomita Tonkotsu Ramen

"Chuukasoba Tomita" is one of Japan's most famous ramen shops...if not its most famous! This special instant ramen from them has the porkiest soup we've ever tasted.

Tomita was popularized outside of Japan in the ramen documentary "Ramenheads". Their signature dish is a tsukemen (dipping ramen). They do serve ramen as well. But this instant ramen isn't something you'll find at their ramen shop - it was specially created!

The soup is porky to the max, extra thick and extra rich. But the tangy shoyu (soy sauce) base provides balance and gives the soup that overall brown color. It wouldn't be a Tomita ramen without shoyu somewhere.

Medium-thick noodles work with the porky soup. Of course there has to be a slice of pork among toppings. You'll also find little piles of negi (spring onions) menma (bamboo shoots).

- Boil 420 ml of water
- Open lid (without removing completely), remove packets
- Place toppings in clear blue packet on top of noodles
- Pour boiled water up to line, seal lid and place red and orange packets (2) on top to heat
- After 4 minutes, break up noodles and pour in orange packet, mix soup
- Pour in red packet, mix soup
- Add green packet (numbing pepper oil) as you like and it's ready!
