Star Soupless Tantanmen

This is from Nakiryu, one of just three Tokyo Michelin star ramen shops!

Nakiryu specializes in tantanmen (dan dan noodles), a spicy style of ramen originally from Sichuan province in China. As you'd expect from a place with a Michelin star, Nakiryu's version is as elevated as tantanmen can get.

But this tantanmen doesn't exist at their restaurant - it's soupless! It features a buttery rich flavor and just enough spiciness in the background. Thick, flat noodles take in these beautiful flavors. This latest version includes a little bit of acidity, coming from tomatoes.

- Boil 440 ml of water
- Pull lid (without removing completely) from tab 1 to tab 2 (marked on outside), remove packets
- Place toppings in clear black packet on top of noodles
- Pour boiled water up to line, seal lid, place red packet on top (heating soup)
- After 5 minutes, pull off tab 3 on lid and drain water
- Add red silver packet, mix noodles, add green packet, and it's ready!
