
Shinpuku Saikan Ramen
"Shinpuku Saikan" is Kyoto's most historical ramen shop. They've been open since 1938!
Shinpuku Saikan basically invented Kyoto style shoyu (soy sauce) ramen. It features a bold, dark shoyu and a soup that's on the richer side...both from pork bones and chicken bones. That's what you get in their official instant ramen, along with Kyoto kujo negi (special spring onions from Kyoto) and thick, straight noodles.

- Boil 430 ml of water
- Open lid (without removing completely), remove packets
- Place toppings in clear green and clear brown packets (2) on top of noodles
- Pour boiled water up to line, seal lid and place red packet (soup) on top to heat
- After 5 minutes, break up noodles and pour in red packet, mix soup, and it's ready!
