Sano Ramen
Sano in Tochigi (North of Tokyo) isn't a big city...but it's one that deeply loves its ramen.
Sano style ramen is lightly seasoned with a beautiful soy sauce. This holds up a delicate and pure tasting soup. The toppings are a nice treat - big bamboo shoots (menma), green spring onions (negi), and a big slab of chashu pork. But the most special feature might be the thick, flat noodles - a Sano speciality!
