Niigata Shoyu Ramen
Winters in Niigata (North of Tokyo) are harsh! This ramen is perfectly designed for them.
Picture this - it's snowing outside. Wouldn't a bowl of ramen hit the spot like no other? This style of Niigata ramen has a bold shoyu (soy sauce) base, with fish flavors in the background. It's also brimming with rich pork back fat (seabura), meant to seal in the heat. In addition, beautifully crunchy onions add welcome bursts of sweetness. We can't forget the uber thick noodles too.
- Boil 430 ml of water
- Open lid (without removing completely)
- Place toppings in dark green and red packets on top of noodles
- Pour boiled water up to line, seal lid and place pink packet (soup) on top to heat
- Break up noodles and pour in, mix soup (pink packet) and it's ready!
