Nagaoka Shoyu Ramen

Nagaoka in Niigata prefecture is known for shoyu (soy sauce) ramen with a powerful jolt of ginger. This addition of ginger really hits the spot when it's cold out (Nagaoka's winters are brutally cold).

Just like in Nagaoka, this instant ramen is powered by a bold shoyu. In the soup there's also sweetness, sourness, and richness. But the ginger in the soup is clearly the star of show.
