
Kuroiwa Tonkotsu Ramen
"Kuroiwa" is one of Kagoshima's most celebrated ramen shops!
First of all, Kagoshima is located at the Southern tip of Kyushu - tonkotsu (pork bone) ramen territory.
Of course Kagoshima style tonkotsu ramen uses pork bones. But many Kagoshima ramen shops, including Kuroiwa, blend chicken bones into the soup too. The chicken adds a cleaner depth of flavor.
Kuroiwai is also known for its fried negi (spring onions). This instant ramen made sure to include this too. The fried negi are like little fireworks in the rich soup, providing jolts of sweetness.
Just like in Kagoshima, the noodles are slightly thicker than other tonkotsu styles (like in Fukuoka).

- Boil 420 ml of water
- Open lid (without removing completely), remove packets
- Place toppings in clear blue packet on top of noodles
- Pour boiled water up to line, seal lid, place green packet on top of lid (heating the soup)
- After 4 minutes, break up noodles, pour in red and green packets (2), mix soup
- Add brown packet contents (fried negi) and it's ready!
