Hirakoya Shoyu Ramen
Up North in Aomori City, ramen shop "Hirakoya" serves top-billed niboshi ramen.
Niboshi is dried fish - normally sardines. They're an important ingredient in ramen and also Japanese cuisine in general. It's bitter, smoky and oh so delicious. At ramen shop Hirakoya, they don't only use niboshi. They also use pork bones in the soup, which gives it a heavier, richer body.
This instant ramen nicely recreates this signature soup of theirs. Enjoy the extra chewy noodles!
