
Chukyo Maze Soba
This regional ramen comes from Nagoya, Japan’s FOURTH largest city. Also referred to as “Chukyo”, Nagoya is home to quite a bit of spicy ramen. This particular spicy ramen is referred to as “Taiwan Maze Soba”. This soupless ramen actually has nothing to do with Taiwan.
It boasts strong flavors - there’s the tangy soy sauce base but additional flavors from fish and chili oil. There’s also creaminess coming from a runny egg sauce (its own packet). This is just like what you’ll get in Nagoya. Thick noodles are a must - they work wonderfully well with everything.

- Boil 500 ml of water
- Pull lid (without removing completely) from tab A to tab B (marked on outside), remove packets
- Place toppings in clear pink packet on top of noodles
- Pour boiled water up to line, seal lid, place green packet on top of lid (heating the soup)
- After 5 minutes, pull off tab C on lid, break up noodles and drain water
- Add green packet, mix noodles
- Add purple packet, mix noodles again, and it's ready!
