
Barikata Maze Soba
"Barikata" is the keyword here! Translated as "extra firm", the noodles in this ramen are most definitely "barikata".
This is an interesting one. It's based on Hakata style tonkotsu (pork bone) ramen. But this time it's a soupless ramen (Maze Soba). There's a creamy pork base and razor-thin, barikata noodles to mop it up. While the noodles are the star of the show, one of the toppings stands out too. This topping is "takana" (pickled mustard leaves). Takana is a popular, tangy condiment in tonkotsu ramen.

- Boil 440 ml of water
- Pull lid (without removing completely) from no. 1 to no. 2 (marked on outside), remove packets
- Place toppings in CLEAR BLUE packet on top of noodles
- Pour boiled water up to line, seal lid
- After 60 seconds, pull no. 3 tab on lid and drain water
- Add PURPLE packet and mix noodles
- Add RED packet (seaweed, sesame, spice) and it's ready!
